LOL, the only twice baked potatoes I've ever made are the ones we made in Home Ec. in 7th grade. We made them in the microwave, but I suppose it would work in the oven too. We just baked them, scraped the potato out of the skins, mixed in some butter, cheese, sour cream, salt and pepper (whatever you want), put it all back in the skin, sprinkled with more cheese, and baked them a while longer until everything melted together.
