First off, let me apologize for my lack of photos. I haven't been bringing my camera along with me lately, so I haven't been taking any pictures. I think I've been pouting lately because I spent my softball coaching wages on new furniture for Jader instead of buying this beauty. Plus, my camera battery has been giving me fits, so I've left it locked in the closet as a form of punishment.
We've been busy as a family. We went to Roosevelt, Utah, the last two weekends in a row to visit family. The first weekend we traveled out to celebrate Austin's grandfather's 80th birthday. It was a very laid back party. It was supposed to start at 10:00 am, but when we rolled up at 10:04 am, we were the second family to arrive. The party planner (Austin's aunt) was there, but no one else showed up until 11:30 or 12:00. Not even the person the party was for. I know I should be used to this with the Sherman family, but it was a little disappointing to me.
However, once the party started we all had fun. Jader loved playing with her cousins, and I can honestly say I have never seen her so filthy. Unfortunately, I dressed her in lighter colored clothing, but since I have the best stain pretreater in the world, I didn't have to worry about stains. Of course, everything came out when I brought the clothes home to wash them.
Austin went for a bike ride with his brother-in-law and his BIL's brother after the party. I wasn't able to go with them because my allergies flared up and I couldn't see well out of one eye, let along stop sneezing long enough to try to ride a bike. I felt left out. But, I was also trying to heal a knee injury and so it was a good thing I didn't go. I heard later that the trail they went on was technical, so I was relieved I didn't go.

The next weekend, July 4th weekend, we traveled to Roosevelt again. We left on Wednesday, because we wanted to get an early bike ride in on Thursday morning. We rode a fun 6 mile trail in Ballard, and I really liked it! My knee did great, there weren't any bugs, I didn't get sunburned, and I didn't crash, so, it was a great day!!
On Independence Day we enjoyed a picnic in the park eating all of our favorite foods from our childhood. After the picnic, and a quick nap, we went to the Annual Ute Indian Tribe Pow-Wow held in Fort Duchesne, Utah, just seven miles east of Roosevelt. We loved looking at the authentic Native American crafts and jewelry. I really loved a pair of earrings I saw, and I am kicking myself that I didn't buy them. The earrings were a beautiful red color, and the bead was made out of sponge coral. Maybe I'll buy some next time I attend a Pow-Wow.
Later on the same day, we enjoyed another outing with family members. We ate good food, and played some Rock Band on the Xbox360. That night, Jader was asleep before the fireworks (which is always the case--in her two years of life she still hasn't seen fireworks) and I watched the local show from my parent's back porch.
On Saturday, we ate at a local restuarant, and celebarated my late father's birthday.
It was a great weekend!

If you are still reading, I want to share one of my favorite summer salads with you. Summer is fun, because I never use my oven when cooking. I make meals in the crockpot (on the deck), in the toaster oven (on the deck) or on a grill (you got it, on the deck) so the house stays cool. This isn't such an issue in Price as it was in St. George, but I still follow the habit of cooking this way when it is warm outside.This salad is delicious, and I think you'll love it!
Corn, Avocado, and Tomato Salad
In serving bowl, add:
2 C. cooked corn
1 avocado, diced 1/2 " cubes
1 pint cherry tomatoes, halved
1/2 C. red onion, finely diced
In separate bowl, whisk:
2 T. olive oil
1 T. fresh lime juice
1/2 ts. lime zest
1/4 C. cilantro, chopped
1/4 ts. salt
1/8 ts. black pepper
Add vinaigrette to salad, mix, and enjoy!
