Canning: It's done!

I am finished canning for this season. All total:

Pears:
10 Quarts

Peaches:
23 Quarts
5 pints

Tomatoes:
20 Quarts
14 pints

My cost: $5 for the pears, electricity to process, and lots of manual labor.

We grew the tomatoes, and the peaches were given to us by our generous neighbors.

I am mostly happy for my first attempt at canning (second at peaches, though). My only disappointment is that on some of the cans of peaches, the syrup leaked out while I was processing them, and so they don't look as pretty. I understand they are still safe to eat, though. As long as we eat them first.

I just love the idea of storing up extra produce and using it throughout the year. I love that I know what went in to my jars as far as extra ingredients. These babies don't have any preservatives that are harmful to my body, and they are just so lovely to look at.

All the standing, hard work, and pinched sciatic nerve have been worth it just to look at my beautiful bottles of food.

Does any one else have this fascination with food preservation?

Yay Julie! Canning leaves one with such a feeling of accomplishment, doesn't it? I am doing applesauce next week. That's my favorite!

Good Job Julie,
I also have been canning up a storm because I feel it is the best for my family and it is cheap. I have canned tomatoes, green beans, potatoes, tomatoes, apricots, cherries, cherry jam, applesauce, apple juice, spaghetti sauce, apricot nectar, pickes, dill pickle relish, and bread & butter pickles. All this in the past 4 months. Crazy I know!
