Are you ready to learn the secret to making a perfect boiled egg? This is fool proof. Believe me.To prep the egg, poke a hole in the center of the large end of the egg. Use a push pin or a needle.
Lay the desired amount of eggs in a pot and cover completely with water. Add a couple of teaspoons of oil to the water. I use Olive Oil or Vegetable Oil. Doesn't matter.
Bring the water to a boil (uncovered) and boil for ten minutes. Stir occasionally with a spoon, and stir the water in a circular motion, which will make the eggs spin and will center the yolk in the egg.
After ten minutes, remove the egg from the stove top and drain the hot water. Replace the hot water with cold water, and completely immerse the eggs to stop them from cooking. Keep the water cold in the pot (change as necessary). After ten minutes, you can peel the eggs and the shell will come right off. The only time this hasn't worked for me is when I purchased old eggs. They didn't want to peel. Otherwise, the hole in the shell and the oil will make the egg shell slip right off.
I've been making my eggs this way for years, and I have never had any flops. You know, the kind where the yolk is undercooked, or overcooked, etc...
Another thing I do, is cook as many eggs as I would like (usually eight or more..they are good source of protein when I am working out regularly), and I peel them, place them in a quart jar, cover with cold water, squeeze a quarter of a lemon into the water, then drop the lemon into the jar, and cover. The eggs will keep in your fridge for up to two weeks.
