I love making granola, and the homemade version is so much better than the store bought variety. I especially like homemade because I can control what goes into it.
Here is my favorite recipe:
2 cup old-fashioned oats
1/2 cup wheat germ
2 Tbs. dark brown sugar
1/4 tsp. salt
1/4 cup chocolate chips
1/4 cup maple syrup
3 Tbs. vegetable oil
1 Tbs. water
1/2 tsp. cinnamon
1/4 cup coconut
1/4 cup chocolate chips
1/4 cup dried pineapple
1/4 cup dried mango
Adjust oven rack to middle position, heat oven to 275 degrees. Coat 9X13" pan with cooking spray and set aside.
Mix oats, wheat germ, brown sugar, salt and chocolate chips in a bowl.
Bring syrup, oil, water and cinnamon to a simmer in a saucepan over low heat. Drizzle over oat mixture, and stir to combine. Pour mixture onto prepared pan. A small handful at a time, squeeze cereal to form small clumps. Bake 30 minutes. Stir in dried fruit. Continue to bake 15 minutes longer. Let cool. Add chocolate chips.
If you double the recipe, use two pans. That way you will still have golden brown granola.
Very yummy!!! I love to eat my granola with milk, or over yogurt.
