We had a lot of fun making these muffins, and they turned out so wonderfully! My entire family loves them. Jader was very helpful in the kitchen. She helped me mix the batter, and line the muffin tins with liners. I have decided that will be her job every time we make muffins together. Her little (almost two-year-old) hands handled that task very well.
Now, on to my submission. My absolute favorite muffin recipe is Double Apple Bran Cereal Muffins. These muffins are easy to make, and very delicious!
Ingredients
1 1/4 c wheat flour
1 T baking powder
1/4 ts ground cinnamon
1/4 ts salt
2 C bran flakes
1 C milk
1 egg
1 small apple (peeled, cored and finely chopped)
1/2 C applesauce
1/3 C brown sugar, firmly packed
2 T margarine, melted
Directions
Mix first four dry ingredients in a large bowl. Mix cereal and milk in another bowl. Let stand 3 minutes. Beat egg in medium bowl. Add apple, applesauce, sugar, and margarine; mix well. Add cereal mixture; mix well. add to flour mixture; stir until just moistened (batter will be lumpy). Spoon batter evenly into 12 medium muffin pans sprayed with nonstick cooking spray or lined with muffin liners. Fill each cup 2/3 full. Bake at 400 degrees for 20 minutes or until golden brown.
