So, I went about making my famous All Fool's Cake, and decided to substitute half of the oil with beans like I had read about on this website. It had been a while since I read about substituting beans for oil, so what I forgot to do is puree my beans. Instead, I mashed them up roughly with a fork and added it to my batter. I immediately recognized that it was going to be a problem, but I went with it.
The cake turned out fine, but there were these little chunks of beans throughout it. Thankfully, they didn't really taste like chunks of beans, but reminded me more of what you would expect when you eat brownies with chocolate chips strewn throughout the batter. It was a weird, almost pleasant, surprise, that's why I called it an 'almost flop'. The cake actually tastes really good, even though I will probably remember to puree the beans next time.
Here's the best chocolate cake recipe in the world:
All Fool's Cake
3 C Flour
1/2 C cocoa
2 Eggs
1 C oil*
1 ts. vanilla
2 C sugar*
1 ts salt
1 C sour milk (1 C milk + 1 ts. vinegar)*
2 ts. soda
Beat all ingredients together and add 1 C boiling water.
Bake @ 350 degrees for 45 minutes.
*I made some alterations, and I wanted to share. Instead of a cup of oil, I put in 1/2 C. oil, and 1/2 C. bean puree (well, should have been puree, but you get the picture). Use a dark bean like pinto or black.
*I only put one cup of sugar (sugar in the raw), and added a cup of applesauce.
*When I make sour milk, I use water, powdered milk, and vinegar. Add the vinegar after the milk is mixed and let it sit for a couple of minutes to sour.
This cake is delicious warm, but I love it even more the next day because the cake gets a thin film of moist goodness on top. That's why I don't think it needs frosting. But, my husband thinks I'm weird for not frosting my cakes, so you make your own judgment call.

That's funny - this is almost exactly my favourite chocolate cake recipe ever too! I never put frosting on it, but cover it and put it in the fridge for later! Yummy!

What a good idea! I have never heard of putting beans into a cake. I usually like to substitute applesauce or other fruit sauces. I will have to try it sometime. What kind of beans work the best?
